UK's Auxiliary Farm

Where our ingredients begin. A working farm that feeds our kitchen, our community, and our mission.

From Soil to Curbside

UK's Auxiliary Farm is the living backbone of Underground Kitchen. Nestled near Gainesville, our farm grows the seasonal produce, herbs, and specialty ingredients that define every dish we serve.

We believe food tastes better when you know exactly where it came from — and when the people who grew it are your neighbors. Our farm is a direct extension of our commitment to honest, transparent, farm-to-table cooking.

Darkibor Kale

Organic green curly kale

coming soon

Similar to Winterbor, but somewhat later to mature and slightly less curled. The color is a darker green versus the blue-green colors of Winterbor and Starbor. A sturdy kale, with tight curl and close internodes. USDA Certified Organic.

Broccoli

Superior Piracicaba strain

coming soon

Piracicaba is a type of mini broccoli bred in the city of the same name in Brazil. 'Sidekick' is our selected strain of Piracicaba. They tended to have floppy plants and lacked uniformity in head size and color. We selected for an upright plant; uniform, dark green heads; and strong side-shoot production. Sidekick produces large quantities of sweet and tender florets on very large, high-yielding plants.

Cauliflower

Organic skywalker Cauliflower

Coming Soon

Uniform, medium-size, self-wrapping heads. Large healthy plants. Cold tolerant. For late-summer and fall harvest. USDA Certified Organic.

Collard Greens

Georgia Southern(F1 Flash)

Growing

Dark gray-green leaves with a smooth margin stack easily for a tidy bunch.
